Ingredients
  

Vegetables
  • 2 pieces aubergines diced chunky (don’t cut ‘em tiny)
  • 1 piece big onion chopped
  • 3 cloves garlic chopped (rough is fine)
  • 2 tablespoons oil for frying
  • to taste salt and pepper
  • 2 tablespoons pomegranate molasses
  • 2 cans chopped tomatoes
  • a little sugar or honey if you want it sweeter

Method
 

  1. Heat oil in a large pan over medium-high heat.
  2. Add diced aubergines and fry for 5–7 minutes until golden and soft. Add more oil if needed.
  3. Stir in chopped onion and garlic. Season with salt and pepper. Cover and cook for 10–15 minutes until soft and fragrant.
  4. Add pomegranate molasses and chopped tomatoes. Stir well.
  5. Adjust sweetness with sugar or honey if desired.
  6. Simmer on low until sauce thickens, about 15 minutes.
  7. Serve hot or warm.
