Ingredients
  

Dairy
  • 80 ml skim milk
  • 600 ml heavy cream
Sweeteners
  • 100 g white sugar
Flavorings
  • 1.5 teaspoons vanilla extract
  • 7 g unflavored gelatin

Method
 

  1. Bloom gelatin in cold skim milk for 5–10 min.
  2. Heat cream and sugar to a boil. Remove from heat.
  3. Stir in gelatin until fully dissolved.
  4. Add vanilla. Cool for 10–15 min.
  5. Pour into ramekins. Cool 20 min at room temp.
  6. Cover and chill 4+ hours (overnight best).
  7. To unmold, dip ramekin in warm water and invert.
