Method
- Bloom gelatin in cold skim milk for 5–10 min.
- Heat cream and sugar to a boil. Remove from heat.
- Stir in gelatin until fully dissolved.
- Add vanilla. Cool for 10–15 min.
- Pour into ramekins. Cool 20 min at room temp.
- Cover and chill 4+ hours (overnight best).
- To unmold, dip ramekin in warm water and invert.
