Ingredients
  

Main
  • 1 whole chicken (approx. 3 lbs / 1.3–1.5 kg)
  • 4 carrots carrots, halved
  • 4 stalks celery stalks, halved
  • 1 large onion, halved (no need to peel)
  • 2.5 liters water to cover
  • to taste salt and black pepper
  • 1 tsp chicken bouillon granules (optional)

Method
 

  1. Place chicken, carrots, celery, and onion in a large pot. Cover with cold water.
  2. Bring to a boil, skim foam, then simmer for 90 minutes with lid slightly ajar.
  3. Remove chicken, cool, then shred. Discard skin and bones.
  4. Strain broth, discard vegetables or chop and return. Rinse pot and pour broth back in.
  5. Add shredded chicken and chopped veggies back to the broth. Warm through.
  6. Season with salt, pepper, and bouillon if using. Add herbs if desired.
  7. Serve hot, with bread or noodles if preferred.
