Dough
  • 2 large eggs
  • 95 g all-purpose flour
  • 120 ml whole milk
  • ½ teaspoon granulated sugar
  • teaspoon kosher salt
  • 80 ml cold water
  • 15 g canola oil
  • 15 g unsalted butter, melted plus extra for skillet
  • 115 g unsalted butter, softened
  • 80 g granulated sugar, divided
  • ½ tablespoon finely grated orange zest
  • 80 ml fresh orange juice about 2 oranges
  • 45 ml orange liqueur (Grand Marnier or Cointreau)
  • 15 ml Cognac

Method
 

  1. Whisk eggs, flour, milk, sugar, and salt until smooth. Add water, oil, and melted butter. Whisk again.
  2. Heat a skillet with butter. Pour batter, cook until edges brown, then flip and cook briefly.
  3. Blend butter, half the sugar, and zest. Add juice and cook until bubbly.
  4. Dip crepes into sauce, fold into quarters, and set aside.
  5. Return crepes to skillet, sprinkle with remaining sugar.
  6. Add warmed liqueur and Cognac, ignite carefully, then spoon sauce over.
  7. Serve immediately.
