Ingredients
  

Oil
  • 1 tsp coconut oil
Spices
  • 4 pods green cardamom pods smashed
  • 1 medium yellow onion diced
  • 0.5 tsp turmeric
  • 0.5 tsp cayenne pepper
Vegetables
  • 2 medium sweet potatoes cubed
  • 2 medium potatoes cubed
  • 1 large carrot sliced
  • 1 green green bell pepper diced
  • 2 cups green beans trimmed
Liquids
  • 1.5 cups vegetable stock
  • 1 can 14 oz chickpeas rinsed
  • 1 can 14 oz coconut milk full-fat
Additional
  • 3 scallions scallions chopped
  • 2 tbsp lemon juice
  • 2 tbsp chopped cilantro
  • to taste Salt

Method
 

  1. Heat coconut oil, add cardamom and onion. Sauté until soft.
  2. Stir in turmeric, cayenne, and ginger garlic paste. Cook 30 sec.
  3. Add sweet potatoes, potatoes, carrots. Salt. Cover 5 min on low.
  4. Add bell pepper, green beans, and ½ cup stock. Cover 5 min.
  5. Add chickpeas, curry powder, 1 cup stock. Simmer 5 min.
  6. Stir in coconut milk and scallions. Warm through, no boil.
  7. Finish with lemon juice, cilantro. Adjust salt. Serve hot.
