  • 3 oz smoked ground reindeer
  • 1 egg egg

  • 1 cup chanterelle mushrooms
  • 1 small yellow onion, sliced
  • Unsalted butter Unsalted butter
  • 2 slices gouda cheese
  • 1 brioche bun brioche bun, toasted
  • Mayonnaise Mayonnaise
  • Dijon mustard Dijon mustard
  • Butter lettuce leaves Butter lettuce leaves
  • Flaky salt Flaky salt
  • 1 large tomato, sliced

Method
 

  1. Preheat skillet for 15 minutes on medium-high.
  2. Mix meats with egg, olive oil, salt, and pepper. Form a patty.
  3. Sear burger and cook mushrooms; grill onions with butter.
  4. Flip burger when crusted; top with gouda. Cover to melt.
  5. Spread mayo and mustard on toasted bun. Layer lettuce, mushrooms, salt, tomatoes.
  6. Baste burger with butter, add grilled onions, then assemble.
  7. Serve immediately.
