Ingredients
  

Oil
  • 0.5 tbsp olive oil
Vegetables
  • 1 piece onion, finely diced
  • 2 cloves garlic, crushed
Spices
  • 0.5 tsp ground coriander
  • 0.5 tsp paprika
  • 0.5 tsp cumin
  • 0.5 tsp ground turmeric
  • 0.5 tsp cayenne pepper
Canned Goods
  • 14 oz chopped tomatoes
  • 14 oz canned chickpeas, drained and rinsed
Seasonings
  • to taste Salt and pepper
Greens
  • 3 cups fresh spinach
  • 0.35 oz fresh coriander, chopped

Method
 

  1. Heat olive oil in a large pan over medium heat.
  2. Add diced onion and crushed garlic. Cook 2 minutes until soft.
  3. Stir in all spices. Cook 30 seconds until fragrant.
  4. Add chopped tomatoes and chickpeas. Season. Simmer for 8 minutes.
  5. In last 2 minutes, add spinach and coriander. Stir until wilted.
  6. Serve hot with rice or naan.
