Method
- Heat olive oil in a large pan over medium heat.
- Add diced onion and crushed garlic. Cook 2 minutes until soft.
- Stir in all spices. Cook 30 seconds until fragrant.
- Add chopped tomatoes and chickpeas. Season. Simmer for 8 minutes.
- In last 2 minutes, add spinach and coriander. Stir until wilted.
- Serve hot with rice or naan.
