Ingredients
  

Pie Crusts
  • 2 pieces pie crusts
Apples
  • 7 large Granny Smith apples, peeled and sliced
Sugars
  • 100 g granulated sugar
  • 110 g light brown sugar
Dry Ingredients
  • 30 g all-purpose flour
  • 1 tsp ground cinnamon
  • 0.125 tsp ground nutmeg
Liquids
  • 15 ml lemon juice + zest from ½ lemon
Egg Wash
  • 1 large large egg, beaten for egg wash
Optional Topping
  • 25 g sanding sugar optional

Method
 

  1. Chill pie dough at least 1 hour. Preheat oven to 400°F (204°C).
  2. Toss apples with sugars, flour, cinnamon, nutmeg, lemon juice, and zest. Let sit 10 minutes. Drain excess juice.
  3. Roll bottom crust into a 12-inch circle. Line pie dish. Dust base with flour.
  4. Add apples, top with second crust. Crimp edges. Cut 4 vents.
  5. Brush with egg wash, sprinkle sanding sugar.
  6. Bake at 400°F (204°C) for 25 min. Reduce to 375°F (190°C) and bake 30–35 min.
  7. Cool at room temp for at least 3 hours before slicing.
