Method
- Chill pie dough at least 1 hour. Preheat oven to 400°F (204°C).
- Toss apples with sugars, flour, cinnamon, nutmeg, lemon juice, and zest. Let sit 10 minutes. Drain excess juice.
- Roll bottom crust into a 12-inch circle. Line pie dish. Dust base with flour.
- Add apples, top with second crust. Crimp edges. Cut 4 vents.
- Brush with egg wash, sprinkle sanding sugar.
- Bake at 400°F (204°C) for 25 min. Reduce to 375°F (190°C) and bake 30–35 min.
- Cool at room temp for at least 3 hours before slicing.
