  • 4 waxy potatoes peeled and thinly sliced
  • 2 yellow onions sliced thin
  • 2 cups hot chicken or vegetable stock
  • 2 tbsp butter or olive oil for sautéing
  • 1 tsp fresh thyme or ½ tsp dried

Method
 

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Sauté onions until golden (15 min).
  3. Layer potatoes and onions in dish, seasoning each layer.
  4. Pour hot stock to just below top layer.
  5. Bake uncovered for 50–60 min until golden and knife-tender.

Notes

Use hot stock to ensure even cooking and crispy tops.
