Ingredients
  

Meat
  • 1 piece steak (ribeye or NY strip, 1–1.5 inches thick)
  • 1 tsp Kosher salt
  • 0.5 tsp Ground black pepper
  • 1-2 tbsp avocado oil
  • 2 tbsp unsalted butter, diced
  • 2 cloves garlic, smashed
  • 2 sprigs rosemary
  • 8-10 sprigs thyme

Method
 

  1. Season steak with salt 2 hours prior. Bring to room temp.
  2. Heat cast iron pan on high for 5–7 minutes.
  3. Pat steak dry and season with pepper.
  4. Sear in oil, flipping every 30 seconds for 5 minutes.
  5. Add butter, garlic, and herbs. Baste for 30–60 seconds.
  6. Rest steak for 10–15 minutes.
  7. Slice against the grain and serve.
