Ingredients
  

Main
  • cups all‑purpose flour
  • tsp baking powder
  • ¼ tsp salt
  • ¼ tsp black pepper
  • 115 g cold unsalted butter frozen
  • 100 g sharp cheddar, shredded
  • 1 cup heavy cream
Topping
  • 1 tbsp melted butter for brushing

Method
 

  1. Preheat oven to 220 °C (425 °F). Line baking sheet.
  2. Mix flour, baking powder, salt, pepper.
  3. Grate cold butter into dry mix.
  4. Fold in shredded cheddar.
  5. Stir in heavy cream until dough forms.
  6. Turn onto floured surface, gently fold 3–4 times.
  7. Pat dough to 2 cm thick, cut biscuits.
  8. Place on tray, brush tops with butter.
  9. Bake 12–15 min until golden.

Notes

Keep everything cold. Don’t overwork the dough. Freeze unbaked biscuits for make‑ahead ease.
