Method
- Warm the broth and keep it at a simmer.
- Sauté onion and garlic in oil for 2 minutes until translucent.
- Add arborio rice, toast for 1 minute until glossy.
- Pour in wine, let it bubble and evaporate (~30 seconds).
- Add broth one ladle at a time, stirring until almost absorbed (≈18 minutes).
- Remove from heat, stir in butter and Parmesan until creamy and glossy. Season to taste.
Notes
Use warm broth, and don’t skip the off‑heat cheese swirl for perfect creaminess.
