Method
- Preheat oven to 180°C (350°F).
- Add onion, garlic, and butter to a baking dish. Bake for 15 minutes, stirring at 12 minutes.
- Mix spices and rub over chicken thighs.
- Remove dish, stir in rice to coat in aromatics.
- Place chicken on rice, pour hot broth and water around it.
- Cover with foil and bake for 30 minutes.
- Remove foil, spray chicken with oil, bake uncovered for 20 minutes.
- Let stand 5 minutes, then serve garnished with herbs.
