Ingredients
  

Protein
  • 5 pieces bone-in chicken thighs, skin removed
Vegetables & Aromatics
  • 1 piece onion (150g), chopped
  • 2 cloves garlic (6g), minced
Dairy & Fats
  • 30 g butter
Grains
  • 270 g uncooked white rice
Liquids
  • 375 ml hot chicken broth
  • 315 ml hot water
Spices & Seasonings
  • 1 tsp paprika
  • 1 tsp dried thyme
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • 0.75 tsp salt
To Taste
  • Black pepper to taste
Other
  • Oil spray
  • Fresh parsley or thyme, chopped

Method
 

  1. Preheat oven to 180°C (350°F).
  2. Add onion, garlic, and butter to a baking dish. Bake for 15 minutes, stirring at 12 minutes.
  3. Mix spices and rub over chicken thighs.
  4. Remove dish, stir in rice to coat in aromatics.
  5. Place chicken on rice, pour hot broth and water around it.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil, spray chicken with oil, bake uncovered for 20 minutes.
  8. Let stand 5 minutes, then serve garnished with herbs.
