Ingredients
  

Spices
  • 1 tsp coriander
  • 1 tsp cumin
  • 0.5 tsp turmeric
  • 0.5 tsp cinnamon
  • 0.5 tsp black pepper
  • 0.25 tsp mustard powder (optional)
  • 0.25 tsp cloves
  • to taste Cayenne
  • 2 tbsp olive oil
  • 1 unit onion, chopped
  • 4 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 8 oz chicken broth
  • 6.3 oz canned diced tomatoes (drained)
  • 24 oz chicken thighs or breasts, chopped
  • to taste Salt
  • 3 oz heavy cream
  • 1 tsp cornstarch plus 2 tsp water (optional)
  • as needed Fresh cilantro

Method
 

  1. Mix spices in a bowl.
  2. Heat oil, sauté onion for 5 mins. Add garlic and ginger, stir 30 sec.
  3. Add spices, toast 1 min.
  4. Add tomatoes and broth, simmer 5–7 mins.
  5. Return to pan, add chicken, simmer 10–12 mins.
  6. Cool slightly, blend until smooth.
  7. Stir in cream, taste and adjust seasoning.
  8. Serve with rice, naan, and a deep exhale.
