Ingredients
  

Lasagna Noodles
  • 9–12 noodles lasagna noodles Cooked al dente
  • 1 cup full-fat ricotta
  • 1 egg egg
  • 1/4 cup grated Parmigiano-Reggiano
  • Zest of 1 lemon lemon zest
  • Salt + pepper to taste salt and pepper
  • 24 oz tomato sauce
  • 2 cups shredded cooked chicken
  • 16 oz mozzarella, grated
  • Olive oil, for coating dish olive oil for greasing baking dish

Method
 

  1. Preheat oven to 375°F (190°C). Oil your baking dish.
  2. Boil lasagna noodles until al dente. Rinse under cold water.
  3. Mix ricotta, egg, Parmigiano, lemon zest, salt, and pepper.
  4. Spread tomato sauce on dish bottom. Add first noodle layer.
  5. Add one-third of sauce, half ricotta, half chicken, one-third mozzarella. Repeat layers. Finish with noodles, sauce, and mozzarella.
  6. Bake for 40–45 minutes until bubbly and golden. Rest 10–15 minutes before slicing.
