Method
- Season chicken with salt and pepper, then cube or strip.
- Heat oil and sauté onions 5–7 minutes until golden.
- Add garlic, ginger, and chilies; cook 2–3 minutes.
- Add curry leaves, chili powder, turmeric, cumin, and coriander; cook 1 minute.
- Add chicken and cook 5–7 minutes until golden.
- Add tomatoes and water, bring to boil.
- Simmer covered 20–30 minutes, stirring occasionally.
- Stir in garam masala, simmer 5 minutes, then add lime juice and coriander.
