Ingredients
  

Protein
  • 4 pieces chicken breasts, cubed
Oil
  • 3 tbsp vegetable oil
Vegetables
  • 2 pieces onions, finely chopped
  • 1 inch fresh ginger, grated
  • 2 cloves garlic, finely chopped
Spices
  • 1 tsp garam masala
  • 2 tsp ground cumin
  • 1 tsp ground coriander
  • 1 tsp ground turmeric
  • 3 tsp hot chili powder
Other
  • 6 curry leaves curry leaves
  • 0.5 lime or lemon juice of half a lime or lemon
  • 450 grams ripe tomatoes, chopped (or 1 tin)
  • 300 ml water
Herbs
  • A handful leaves fresh coriander leaves, chopped

Method
 

  1. Season chicken with salt and pepper, then cube or strip.
  2. Heat oil and sauté onions 5–7 minutes until golden.
  3. Add garlic, ginger, and chilies; cook 2–3 minutes.
  4. Add curry leaves, chili powder, turmeric, cumin, and coriander; cook 1 minute.
  5. Add chicken and cook 5–7 minutes until golden.
  6. Add tomatoes and water, bring to boil.
  7. Simmer covered 20–30 minutes, stirring occasionally.
  8. Stir in garam masala, simmer 5 minutes, then add lime juice and coriander.
