Ingredients

  • 500 g Chicken breast thinly sliced
  • 1.5 litres Chicken broth low sodium preferred
  • 1 piece Dashi Kombu approx. 10x10cm
  • 5 cm Fresh ginger thinly sliced
  • 4 Spring onions sliced for garnish and broth
  • 150 g Shiitake mushrooms sliced
  • 300 g Napa cabbage chopped into bite-sized pieces
  • 100 g Fresh spinach
  • 200 g Firm tofu cubed
  • 60 ml Soy sauce for dipping sauce
  • 30 ml Mirin for dipping sauce
  • 30 ml Cooking sake for dipping sauce
  • 15 ml Sesame oil for dipping sauce
  • 2 Garlic cloves minced, for dipping sauce
  • 15 ml Lime juice freshly squeezed, for dipping sauce
  • 2 g Chilli flakes optional, for dipping sauce
  • 200 g Udon noodles optional, for serving at the end

Equipment

  • gordon ramsay food
  • Large Pot
  • Small bowl
  • Chopsticks

Method

  1. In your gordon ramsay food or a large pot, combine the chicken broth, dashi kombu, and half of the thinly sliced ginger. Bring it to a gentle simmer over medium heat. Allow it to infuse for about 10-15 minutes, then carefully remove and discard the kombu.
  2. While the broth is simmering, prepare your vibrant dipping sauce. In a small bowl, whisk together the soy sauce, mirin, cooking sake, sesame oil, minced garlic, fresh lime juice, and chilli flakes (if you like a little kick!). Set this delicious sauce aside.
  3. Arrange all your meticulously prepared ingredients – the beautifully thin chicken slices, spring onions, shiitake mushrooms, napa cabbage, fresh spinach, and firm tofu cubes – on a large platter. This presentation makes the meal even more inviting!
  4. Place the gordon ramsay food in the centre of your dining table, ensuring the broth maintains a gentle simmer throughout the meal. Each diner can then use chopsticks to pick up their desired thin slices of chicken or vegetables and swirl them in the hot broth until perfectly cooked through.
  5. Dip the freshly cooked chicken and vegetables into your prepared flavourful sauce and enjoy immediately. Feel free to replenish the broth as needed to keep the deliciousness flowing.
  6. Once you've savoured most of the solid ingredients, you can add udon noodles directly into the incredibly flavourful broth. Let them cook for a few minutes until tender, for a wonderfully satisfying end to your meal.
