Method
- Boil water, add rice. Simmer 20–25 mins, rest 5 mins.
- Mix soy, sugar, cornstarch, ginger, garlic, red pepper flakes. Marinate chicken 15–30 mins.
- Heat 1/2 tbsp oil in wok. Stir fry veg 4–5 mins. Set aside.
- Add 1/2 tbsp oil. Sear chicken 2 mins per side.
- Add veg and marinade. Stir, boil, reduce 5–7 mins until thick and chicken cooked.
- Serve over rice.
