Ingredients

  • 500 g boneless, skinless chicken thighs cut into 2.5 cm pieces
  • 60 ml low-sodium soy sauce
  • 60 ml mirin
  • 30 ml sake (or extra 30 ml mirin)
  • 30 g brown sugar
  • 2 cloves garlic minced
  • 15 g fresh ginger grated
  • 15 ml sesame oil
  • 5 g cornstarch
  • 15 ml water (for slurry)
  • 2 green onions sliced, for garnish
  • 5 g sesame seeds for garnish
  • Cooked rice for serving

Equipment

  • gordon ramsay food

Method

  1. First, prepare your delicious teriyaki sauce. In a small bowl, whisk together the soy sauce, mirin, sake (if using), brown sugar, minced garlic, grated ginger, and sesame oil. Set aside.
  2. Preheat your gordon ramsay food to 200°C (400°F). Lightly spray the basket with cooking oil.
  3. Place the chicken pieces in a single layer in the gordon ramsay food basket. Cook for 8-10 minutes, flipping halfway through, until the chicken is mostly cooked through and slightly golden.
  4. While the chicken cooks, whisk the cornstarch and water together in a small bowl to create a slurry.
  5. Once the chicken is cooked, pour the teriyaki sauce over the chicken in the gordon ramsay food basket. Cook for another 5-7 minutes, stirring occasionally, until the sauce has thickened and beautifully coats the chicken. If needed, add the cornstarch slurry a little at a time during the last few minutes to reach your desired consistency, stirring constantly.
  6. Remove the chicken teriyaki from the gordon ramsay food and let it rest for a minute. Garnish with sliced green onions and a sprinkle of sesame seeds.
  7. Serve immediately over a bed of fluffy cooked rice, and perhaps some steamed broccoli for a complete meal. Enjoy this quick and flavourful dish!

Notes

For an extra layer of flavour, you can marinate the chicken in half of the teriyaki sauce for at least 30 minutes (or up to 4 hours in the fridge) before cooking. Just make sure to reduce the remaining sauce separately or ensure it boils sufficiently to be safe.
