Ingredients
  

Vegetables
  • 1 large onion, chopped
  • 2 cloves garlic, finely chopped
  • 1 red chili, deseeded red chili
  • 2 sprigs thyme, leaves picked
  • 2 tbsp olive oil
  • 500 g beef mince
  • 1 tsp ground cumin
  • 2 tsp sweet paprika
  • 1 tsp dried oregano
  • 3 fresh tomatoes chopped tomatoes
  • 400 g canned chopped tomatoes
  • 2 tbsp tomato puree
  • 200 ml beef or chicken stock
  • 1 stick cinnamon
  • 1 bay leaf bay leaf
  • 400 g kidney beans, drained
  • to taste Salt and pepper

Method
 

  1. Heat oil and cook onion, garlic, chili, and thyme for 5–6 minutes.
  2. Brown the mince until deep golden, then add to the vegetable mix.
  3. Stir in cumin, paprika, oregano; cook for 2 minutes.
  4. Add chopped tomatoes, tomato puree, and stock; drop in cinnamon and bay leaf.
  5. Simmer for 20–25 minutes until thickened.
  6. Add kidney beans and cook for 10 more minutes.
  7. Season with salt and pepper, rest for 10 minutes, then serve.

Notes
