- Brown the mince until deep golden, then add to the vegetable mix.
- Stir in cumin, paprika, oregano; cook for 2 minutes.
- Add chopped tomatoes, tomato puree, and stock; drop in cinnamon and bay leaf.
- Simmer for 20–25 minutes until thickened.
- Add kidney beans and cook for 10 more minutes.
- Season with salt and pepper, rest for 10 minutes, then serve.
