Ingredients
  

Butter
  • ½ cup unsalted butter room temperature
Sugar
  • ¾ cup light brown sugar
Egg
  • 1 large egg 50g, room temperature
Vanilla Extract
  • 1 tsp vanilla extract
Flour
  • 1 cup all-purpose flour
Oats
  • ¾ cup quick-cooking oats
Baking Soda
  • 1 tsp baking soda
Sea Salt
  • 1 tsp fine sea salt
Chocolate Chips
  • ½ cup semisweet chocolate chips

Method
 

  1. Preheat oven to 175°C (350°F). Line a baking sheet with parchment or silicone mat.
  2. Beat butter and sugar until light and fluffy (~4 min).
  3. Add egg and vanilla, beat until smooth.
  4. Whisk flour, oats, baking soda, and salt.
  5. Add dry ingredients to wet, mix on low.
  6. Fold in chocolate chips.
  7. Scoop dough (~1.5 tbsp per cookie) onto sheet, 5 cm apart.
  8. Chill for 30 min if desired.
  9. Bake 10–12 min until edges are golden.
  10. Cool on sheet 5 min, then transfer to wire rack.
