  • 100 g bittersweet chocolate (70%)
  • 100 g unsalted butter plus more for greasing
  • 2 whole eggs
  • 2 egg yolks
  • 1/4 cup powdered sugar
  • 2 tbsp flour all-purpose

Method
 

  1. Preheat oven to 425°F (220°C). Grease and flour ramekins.
  2. Melt chocolate and butter over a double boiler until smooth.
  3. Whisk eggs, yolks, and sugar in a bowl until pale.
  4. Add flour and gently mix. Fold in chocolate mixture.
  5. Divide into ramekins. Bake for 12 minutes until edges are set but center jiggles.
  6. Cool for 1 minute, then invert onto plates and serve warm.

Notes

Chill ramekins before baking for a more stable shape.
