Ingredients
  

Eggs
  • 55 g eggs separated into whites and yolks
Chocolate
  • 125 g dark cooking chocolate (70% cocoa)
Butter
  • 10 g unsalted butter
Cream
  • 120 ml full-fat cream
Sugar
  • 3 tablespoons caster sugar (superfine sugar)
Whipped Cream
  • More whipped cream for topping
Chocolate Shavings
  • Chocolate shavings for garnish

Method
 

  1. Separate eggs, placing whites and yolks in separate bowls.
  2. Whisk yolks until smooth.
  3. Melt chocolate and butter in microwave in 30-second bursts, stirring until smooth. Cool slightly.
  4. Whip cream to stiff peaks.
  5. Add sugar to egg whites and whip to firm, glossy peaks.
  6. Fold egg yolks into whipped cream. Add melted chocolate and fold again.
  7. Gently fold in whipped egg whites in batches.
  8. Spoon into serving glasses and chill at least 6 hours.
  9. Serve topped with whipped cream and chocolate shavings.
