Ingredients
  

Dough
  • 115 g unsalted butter
  • 55 g sugar
  • 0.25 tsp salt
  • 155 g all-purpose flour
  • 1 large egg yolk egg yolk
Chocolate filling
  • 225 g semisweet chocolate, chopped
  • 300 ml heavy cream
  • 30 g sugar
  • 0.25 tsp salt
  • 2 large eggs eggs
  • 1 tsp vanilla extract
Chocolate glaze
  • 45 ml heavy cream
  • 15 ml light corn syrup
  • 60 g semisweet chocolate, chopped
  • 15 ml hot water

Method
 

  1. Cream butter, sugar, salt for 2 min. Add flour, mix low. Add yolk, mix to dough.
  2. Press into 9.5-inch tart pan. Freeze 30 min.
  3. Preheat oven to 175°C (350°F). Bake crust 20 min. Cool.
  4. Pour hot cream over chocolate. Wait 30s. Stir smooth. Add sugar, salt, eggs, vanilla.
  5. Pour filling into crust. Bake 20–25 min until just set. Cool 1 hour.
  6. Microwave cream + corn syrup. Stir in chocolate. Add hot water.
  7. Pour glaze over cooled tart. Tilt to coat. Set 1 hour.
  8. Slice with hot knife, serve.
