Method
- Mix coffee, sugar, paprika, salt, pepper, garlic, and onion powder in a small bowl.
- Pat steaks dry. Rub 1–2 tsp of mix on each side. Let sit 20–30 minutes.
- Heat grill or skillet to 450°F / 232°C.
- Sear steaks 2–3 mins per side. Internal temp: 130°F / 54°C for medium-rare.
- Rest under foil 15 minutes.
- Slice against the grain. Serve hot.
