Ingredients
  

Meat
  • 4 pieces ribeye steaks (or similar cut)
  • 28 g fresh coffee grounds
  • 15 g dark brown sugar
  • 8 g smoked paprika
  • 6 g sea salt or Maldon
  • 2 g black pepper
  • 1.5 g garlic powder
  • 1.5 g onion powder

Method
 

  1. Mix coffee, sugar, paprika, salt, pepper, garlic, and onion powder in a small bowl.
  2. Pat steaks dry. Rub 1–2 tsp of mix on each side. Let sit 20–30 minutes.
  3. Heat grill or skillet to 450°F / 232°C.
  4. Sear steaks 2–3 mins per side. Internal temp: 130°F / 54°C for medium-rare.
  5. Rest under foil 15 minutes.
  6. Slice against the grain. Serve hot.
