Ingredients
  

Dough
  • 300 g flour
  • 3 large eggs
Filling
  • 100 g baby spinach
  • 200 g ricotta cheese
  • 1 large egg (for the filling)
  • 2–3 tbsp pecorino romano
  • Pinch nutmeg
  • 1 tbsp olive oil
  • 1 piece black truffle (optional. Or imaginary.)
Egg Yolk
  • 1 per ravioli egg yolk one yolk per ravioli

Method
 

  1. Sauté spinach in olive oil. Cool. Mix with ricotta, egg, cheese, nutmeg. Chill.
  2. Make pasta dough: Mix flour + eggs. Knead 8–10 mins. Rest 10–20 mins.
  3. Roll dough thin (1mm). Pipe filling in a ring. Drop yolk in center.
  4. Cover with another sheet. Press to seal. Cut into shape.
  5. Boil gently in salted water for 4–5 mins. Remove with slotted spoon.
  6. Plate. Top with cracked pepper, cheese, or brown butter if desired.
