Method
- Marinate fish with spices and lemon juice; rest 15–30 mins.
- Sauté onions in ⅓ cup oil until golden, about 18 mins.
- Add garlic and ginger; sauté 2 mins. Deglaze with 2 tbsp water.
- Stir in spices; cook 1 min. Add tomatoes; cook 5 mins.
- Add water; simmer covered 10 mins.
- Pan-fry fish in 2 tbsp oil, 4 mins per side.
- Reduce curry if needed. Add fish, chilies, pepper, ginger, cilantro, and lemon juice; sit 2–3 mins.
- Serve hot with naan or rice.
