Method
- Marinate goat with yogurt, spices, and prunes; chill 8–14 hours.
- Soak rice in cold water for 1 hour.
- Caramelize onions in butter, add tomatoes; cook until oil separates.
- Add marinated goat and potatoes; brown, then add water and simmer until tender.
- Boil rice in salted water for 10 mins; drain when 70% cooked.
- Layer rice and goat mixture with bay leaves in an oven dish.
- Cover tightly and bake at 275°F for 30–40 mins.
- Rest for 10 mins, then serve hot.
