Method
- Crush garlic, chili, sugar, shrimp, and half the peanuts into a paste in a mortar.
- Stir in fish sauce and lime juice. Adjust to taste.
- Julienne green papaya and remove seeds.
- Lightly crush beans and tomatoes in the mortar. Add to a bowl.
- Toss in papaya and cabbage. Add dressing and mix.
- Top with remaining peanuts. Serve immediately.
