Ingredients
  

Vegetables and Herbs
  • 1–2 cloves garlic minced
  • 1 piece bird’s eye chili thinly sliced
  • 1 tsp palm sugar or light brown sugar
  • 2 tsp dried shrimp
  • 0.25 cup roasted peanuts divided
  • 2 tsp fish sauce adjust to taste
  • 2 pcs limes juiced
  • 3 cups shredded green papaya unripe
  • 0.5 small green cabbage thinly sliced
  • 5–7 long or green beans green beans cut into 2-inch pieces
  • 8 pcs cherry tomatoes halved

Method
 

  1. Crush garlic, chili, sugar, shrimp, and half the peanuts into a paste in a mortar.
  2. Stir in fish sauce and lime juice. Adjust to taste.
  3. Julienne green papaya and remove seeds.
  4. Lightly crush beans and tomatoes in the mortar. Add to a bowl.
  5. Toss in papaya and cabbage. Add dressing and mix.
  6. Top with remaining peanuts. Serve immediately.
