Method
- Preheat oven to 180°C (350°F).
- Season beef with salt and pepper.
- Heat oil and butter in a heavy pot. Cook onions 6–8 mins until golden.
- Brown beef in batches, 2 mins per side.
- Add garlic, peppers, and tomatoes. Cook 3 mins.
- Stir in paprika, caraway, bay leaf. Cook 30 seconds.
- Add stock, bring to simmer. Cover and bake 1.5 hours.
- Add carrots and potatoes. Bake another 30–40 mins until tender.
- Rest 10 mins, garnish with parsley, serve hot.
