Method
- Preheat oven to 425°F (220°C).
- Dry hens thoroughly with paper towels.
- Mix garlic, lemon zest, herbs, paprika, olive oil, salt, and pepper into a rub.
- Rub mixture inside and out of each hen.
- Stuff each cavity with lemon slices or herbs.
- Tie legs with twine or bread tie.
- Roast for 50–60 minutes until internal temp reaches 165°F (74°C).
- Rest for 2–3 minutes. Serve hot.
