Ingredients
  

Meat
  • 2 pieces thawed Cornish hens
  • 1 clove garlic, finely grated
  • 1 unit lemon zest
  • 2 tsp fresh rosemary or 1 tsp dried
  • 2 tsp fresh thyme or 1 tsp dried
  • 1 tsp paprika
  • 4 tbsp olive oil
  • 2 tsp coarse salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C).
  2. Dry hens thoroughly with paper towels.
  3. Mix garlic, lemon zest, herbs, paprika, olive oil, salt, and pepper into a rub.
  4. Rub mixture inside and out of each hen.
  5. Stuff each cavity with lemon slices or herbs.
  6. Tie legs with twine or bread tie.
  7. Roast for 50–60 minutes until internal temp reaches 165°F (74°C).
  8. Rest for 2–3 minutes. Serve hot.
