Ingredients
  

Broth and liquids
  • 15 g sesame oil
  • 9 g grated ginger
  • 12 g grated garlic
  • 960 ml chicken or veggie broth
  • 960 ml water
  • 28 g dried shiitake mushrooms
Noodles
  • 2 packs instant ramen noodle packs (no seasoning packets)
Vegetables and toppings
  • 60 g chopped scallions or chives
  • 120 g chopped kale (or spinach)
  • 130 g shredded carrots
Toppings
  • to taste Sriracha or chili oil
  • to taste Crunchy golden panko for topping (toast in pan!)

Method
 

  1. Heat sesame oil. Add garlic and ginger. Cook 2–3 mins.
  2. Add broth, water, and mushrooms. Simmer 10 mins.
  3. Add noodles. Cook 4–5 mins until al dente.
  4. Stir in kale, carrots, scallions. Let soften off heat.
  5. Top with toasted panko, chili oil, and serve hot.
