Ingredients
  

Meat
  • 2 lb lamb shoulder, bone-in preferred
Vegetables & Aromatics
  • 2 pcs onions, chopped
  • 3 cloves garlic, crushed range 3-5 cloves
Fats & Oils
  • 3 tbsp ghee or oil + butter
Spices & Herbs
  • 2 tbsp curry powder
  • 1 tbsp black pepper
  • 1 tbsp ground coriander
  • 1 tbsp cumin
  • 2 tsp salt
  • 1 tsp fresh rosemary
  • 1 tsp dried thyme
  • 2 slices lemon with rind with rind
  • 2 pcs tart apples, chopped
  • 0.25 cup golden raisins
Liquids
  • 1.5 cups chicken stock
Potatoes
  • 1.5 lb small potatoes, quartered
Rice & Grains
  • 2 cups basmati rice
  • 3 cups water
  • 1 tbsp butter or ghee
  • 1 tsp salt

Method
 

  1. Brown lamb in batches in hot ghee/oil. Set aside.
  2. Toast curry powder in pot. Add onions and garlic. Cook 5 mins.
  3. Return lamb. Add all spices, herbs, lemon, apples, raisins, stock. Simmer 2 hours.
  4. Add potatoes. Cook 45 mins. Prepare rice: boil water, rice, butter, salt. Simmer 15 mins, rest 10 mins.
  5. Adjust seasoning. Serve curry over rice with chutney or yogurt.
