Ingredients
  

Meat
  • 1.1 lb lamb chops
Oil
  • 3 tbsp olive oil
Vegetables
  • 1 large carrot, chopped
  • 1 stalk celery stalk, chopped
  • 1 large onion, chopped
Flour
  • 2 tbsp plain flour
Broth
  • 1 liter beef stock
Herbs
  • 8 sprigs fresh thyme
  • 1 bay leaf bay leaf
Butter
  • 100 g butter, melted
Potatoes
  • 2 large Maris Piper potatoes, sliced thin
Seasoning
  • to taste Salt and black pepper

Method
 

  1. Preheat oven to 170°C / 150°C Fan / 325°F.
  2. Season lamb, sear 2–3 mins per side in oil. Transfer to casserole dish.
  3. Sauté veg in same pan 4–5 mins. Add flour, cook 2–3 mins.
  4. Gradually add stock, stirring constantly. Simmer to thicken.
  5. Pour over lamb. Add thyme sprigs and bay leaf. Simmer gently.
  6. Layer thin potato slices on top. Brush with melted butter and thyme.
  7. Bake uncovered for 1–1½ hours until golden and tender.
