Ingredients
  

Lobster Tails
  • 4 pieces lobster tails
  • 60 g salted butter, melted
  • 2 cloves garlic, crushed
  • 10 ml lemon juice
  • 0.5 tsp smoked paprika
  • Pinch cayenne pepper

Method
 

  1. Thaw lobster tails overnight or in cold water for 30 minutes.
  2. Preheat oven to 260°C and position rack 4–5 inches from broiler.
  3. Cut down the center of each shell and lift the meat out to sit on top.
  4. Whisk melted butter with garlic, lemon juice, paprika, and cayenne.
  5. Brush lobster meat generously with the butter sauce.
  6. Broil for 1 minute per ounce of lobster, watching carefully.
  7. Remove when meat is opaque and lightly browned.
  8. Serve immediately with lemon wedges.
