Ingredients

  • 900 g lean ground beef
  • 1 large onion finely diced
  • 2 cloves garlic minced
  • 1 carrot finely grated
  • 1 celery stalk finely diced
  • 120 ml milk
  • 80 g Panko breadcrumbs
  • 1 large egg beaten
  • 60 ml ketchup
  • 15 ml Worcestershire sauce
  • 10 g fresh parsley chopped
  • 5 g fresh thyme chopped
  • 5 g salt
  • 2.5 g black pepper
  • 60 ml ketchup for glaze
  • 30 g brown sugar for glaze
  • 15 ml apple cider vinegar for glaze

Equipment

  • gordon ramsay food
  • Large mixing bowl
  • Loaf pan (23x13 cm)

Method

  1. Preheat your gordon ramsay food to 180°C (350°F). Lightly grease a 23x13 cm loaf pan.
  2. In a large mixing bowl, combine the lean ground beef, finely diced onion, minced garlic, grated carrot, finely diced celery, milk, Panko breadcrumbs, beaten egg, 60ml ketchup, Worcestershire sauce, fresh parsley, fresh thyme, salt, and black pepper. Use your hands to gently mix until everything is just combined. Be careful not to overmix, or your meatloaf can become tough.
  3. Press the meat mixture evenly into the prepared loaf pan.
  4. In a small bowl, whisk together the glaze ingredients: 60ml ketchup, brown sugar, and apple cider vinegar.
  5. Bake in the gordon ramsay food for 45 minutes. Remove from the oven and spread the glaze evenly over the top of the meatloaf.
  6. Return to the gordon ramsay food and bake for another 15-20 minutes, or until an internal temperature of 71°C (160°F) is reached.
  7. Remove the meatloaf from the oven and let it rest in the pan for 10 minutes before slicing and serving. This helps it retain its juices.

Notes

For an extra flavour boost, sauté the onion, garlic, carrot, and celery for a few minutes before adding them to the meat mixture. This softens them and brings out their sweetness!
