Gordon Ramsay Minestrone Recipe

Ingredients
  

  • 2 tbsp Olive oil
  • 1 Onion diced
  • 2 Carrots diced
  • 2 stalks Celery diced
  • 3 cloves Garlic minced
  • 1 Zucchini diced
  • 400 g Canned chopped tomatoes
  • 1.2 L Vegetable broth
  • 400 g Canned cannellini beans drained and rinsed
  • 75 g Small pasta such as ditalini or small shells
  • 100 g Fresh spinach
  • 30 g Fresh basil chopped
  • 1 tsp Dried oregano
  • Salt to taste
  • Black pepper to taste
  • Parmesan cheese for serving (optional)

Method
 

  1. Heat the olive oil in your gordon ramsay food appliance on a medium setting. Add the diced onion, carrots, and celery, and sauté for 5-7 minutes until softened, stirring occasionally.
  2. Stir in the minced garlic and dried oregano, cooking for another minute until fragrant. Be careful not to burn the garlic!
  3. Add the diced zucchini, canned chopped tomatoes, and vegetable broth to the pot. Bring the mixture to a gentle simmer.
  4. Once simmering, add the drained and rinsed cannellini beans and the small pasta. Cook according to the pasta package directions, usually 8-10 minutes, until the pasta is al dente.
  5. Stir in the fresh spinach and chopped basil. Cook for just 1-2 minutes more, or until the spinach has wilted.
  6. Season the minestrone with salt and black pepper to taste. Give it a good stir and ladle the hot soup into bowls.
  7. Serve immediately, garnished with a sprinkle of fresh Parmesan cheese if desired. Enjoy your wholesome and delicious meal!

Notes
