Ingredients
  

Pasta
  • 8-10 sheets dried lasagna sheets
  • 30 ml olive oil
  • 150 g large leek trimmed and sliced
  • 225 g baby bella mushrooms washed, trimmed, and sliced
  • 2 cloves garlic sliced
  • 120 ml fresh cream
  • 240 ml chicken stock or vegetable stock
  • to taste Salt and pepper
  • optional Tarragon for garnish

Method
 

  1. Boil salted water for lasagna sheets.
  2. Sauté mushrooms in olive oil until browned (5–6 mins).
  3. Add garlic, stir for 30 seconds.
  4. Add leeks, lower heat, sweat 5–6 mins.
  5. Pour in stock, reduce by ⅓.
  6. Stir in cream, simmer 3–4 mins.
  7. Cook lasagna sheets, rinse, slice into 2-inch strips.
  8. Toss pasta into sauce, heat through 2–3 mins.
  9. Season, garnish, and serve.
