Method
- Boil salted water for lasagna sheets.
- Sauté mushrooms in olive oil until browned (5–6 mins).
- Add garlic, stir for 30 seconds.
- Add leeks, lower heat, sweat 5–6 mins.
- Pour in stock, reduce by ⅓.
- Stir in cream, simmer 3–4 mins.
- Cook lasagna sheets, rinse, slice into 2-inch strips.
- Toss pasta into sauce, heat through 2–3 mins.
- Season, garnish, and serve.
