Ingredients
  

Butter
  • 30 g unsalted butter
Vegetables
  • 1 piece onion, chopped
  • 2 cloves garlic cloves, minced
Mushrooms
  • 400 g white mushrooms
  • 200 g Swiss Brown/Cremini mushrooms
Broth
  • 750 ml vegetable stock (or chicken stock)
Seasonings
  • 0.25 tsp salt (cooking/kosher)
  • 0.125 tsp black pepper
Cream
  • 180 ml crème fraîche or full-fat cream
Garnishes
  • to taste Croutons (for garnish)
  • to taste Extra virgin olive oil or cream (for drizzling)
  • a handful Fresh parsley (roughly chopped) chervil or thyme leaves
  • as needed Bread (for dunking)

Method
 

  1. Chop mushrooms into small chunks.
  2. Sauté onion and garlic in butter for 3 minutes over medium heat.
  3. Add mushrooms, cook for 10 minutes, lid on initially, stir occasionally.
  4. Add stock, salt, and pepper; simmer uncovered for 15 minutes.
  5. Stir in cream and simmer for 5 more minutes.
  6. Blend soup until smooth in batches.
  7. Return to pot, taste, and season if needed.
  8. Serve with croutons, herbs, and a drizzle of olive oil.
