Method
- Chop mushrooms into small chunks.
- Sauté onion and garlic in butter for 3 minutes over medium heat.
- Add mushrooms, cook for 10 minutes, lid on initially, stir occasionally.
- Add stock, salt, and pepper; simmer uncovered for 15 minutes.
- Stir in cream and simmer for 5 more minutes.
- Blend soup until smooth in batches.
- Return to pot, taste, and season if needed.
- Serve with croutons, herbs, and a drizzle of olive oil.
