Ingredients
  

Dough
  • 1 cup unsalted butter, softened
  • 1 cup light brown sugar
  • 0.5 cup granulated sugar
  • 2 large eggs, room temperature
  • 1.5 tsp vanilla extract
  • 1.75 cups all-purpose flour
  • 2 tsp cornstarch
  • 1 tsp baking soda
  • 0.75 tsp salt
  • 0.75 tsp ground cinnamon
  • 3 cups old-fashioned rolled oats
  • 1.5 cups chocolate chips, chopped nuts, or raisins (your choice)

Method
 

  1. Beat softened butter for 30 seconds. Add sugars and beat until light and fluffy.
  2. Add eggs one at a time, then stir in vanilla.
  3. Whisk flour, cornstarch, baking soda, salt, and cinnamon in a separate bowl.
  4. Gradually mix dry ingredients into the butter mixture.
  5. Stir in oats, then fold in your choice of mix-ins.
  6. Cover and chill dough for at least 30 minutes.
  7. Preheat oven to 190°C (375°F). Line baking sheets with parchment.
  8. Scoop 30g dough balls, space 5cm apart.
  9. Bake for 10–12 minutes until edges are golden and centers are soft.
  10. Cool completely on the baking sheet before serving.
