Method
- Beat softened butter for 30 seconds. Add sugars and beat until light and fluffy.
- Add eggs one at a time, then stir in vanilla.
- Whisk flour, cornstarch, baking soda, salt, and cinnamon in a separate bowl.
- Gradually mix dry ingredients into the butter mixture.
- Stir in oats, then fold in your choice of mix-ins.
- Cover and chill dough for at least 30 minutes.
- Preheat oven to 190°C (375°F). Line baking sheets with parchment.
- Scoop 30g dough balls, space 5cm apart.
- Bake for 10–12 minutes until edges are golden and centers are soft.
- Cool completely on the baking sheet before serving.
