Ingredients

  • 4 pounds chuck roast
  • Salt and pepper to taste Salt and pepper
  • 2 tablespoons olive oil
  • 1 packet dry onion soup mix
  • 1 cup water
  • 3 carrots carrots, chopped
  • 3 potatoes potatoes, peeled and cubed
  • 1 onion onion, chopped
  • 1 stalk celery, chopped

Method
 

  1. Season the chuck roast with salt and pepper.
  2. Sear the roast in olive oil for 4 minutes per side until golden.
  3. Place the seared roast in the slow cooker.
  4. Sprinkle onion soup mix over the beef.
  5. Pour water around the sides of the roast.
  6. Add vegetables over the meat.
  7. Cook on LOW for 8–10 hours until tender.
  8. Shred or slice the beef and serve with juices.
