Method
- Season the chuck roast with salt and pepper.
- Sear the roast in olive oil for 4 minutes per side until golden.
- Place the seared roast in the slow cooker.
- Sprinkle onion soup mix over the beef.
- Pour water around the sides of the roast.
- Add vegetables over the meat.
- Cook on LOW for 8–10 hours until tender.
- Shred or slice the beef and serve with juices.
