Ingredients
  

Protein
  • 240 g large prawns, peeled
Vegetables
  • 1 head romaine lettuce
  • 1 bag rocket (arugula)
  • 1 avocado diced avocado
  • 0.5 red onion red onion, thin sliced
  • 4 medium tomatoes, quartered
Seeds & Dressing
  • 3 tbsp mixed seeds (optional)
  • 2 tbsp maple syrup
  • 2 tbsp apple cider vinegar
  • 0.25 cup extra virgin olive oil
  • 1 tbsp Dijon mustard
  • 0.5 tsp onion powder
  • 0.25 tsp garlic powder
Salt + pepper to taste

Method
 

  1. Cook prawns in olive oil for 2 minutes per side until pink. Rest.
  2. Whisk dressing ingredients in a jar or bowl. Adjust to taste.
  3. Prepare salad: chop lettuce, slice onion, dice avocado, quarter tomatoes.
  4. Toss lettuce, arugula, tomatoes, and onion in a bowl.
  5. Add prawns and dressing. Gently toss.
  6. Top with avocado and seeds. Serve immediately.
