Ingredients
  

Main dough
  • 300 g Plain flour plus extra for dusting
  • 1 tsp Salt
  • 250 g Unsalted butter cold, cubed
  • 150 ml Cold water ice-cold

Method
 

  1. Mix flour and salt in a large bowl.
  2. Add cold butter cubes and rub into the flour until pea-sized lumps remain.
  3. Add cold water gradually, mix lightly until dough just holds.
  4. Shape dough into a rectangle, wrap, and chill 30 minutes.
  5. Prepare butter block by pounding cold butter into a thin square, chill.
  6. Roll dough, encase butter, fold and roll 3 times with resting.

Notes

Keep everything cold and don’t rush resting times for the best layers.
