- Rinse quinoa and cook according to package instructions.
- Spread cooked quinoa on a plate to cool.
- Toast almonds in a dry pan until golden, then add to a salad bowl.
- Peel cucumber in strips, deseed, and slice; add to bowl.
- Add cherry tomatoes, raisins, spring onions, and mint to the bowl.
- Add cooled quinoa, season with salt and pepper.
- Drizzle lime juice and olive oil, then toss gently.
- Garnish with remaining mint and serve.
