Ingredients
  

Main
  • 200 g quinoa
  • 50 g flaked almonds
  • 0.5 cucumber cucumber ½ cucumber, peeled in strips, deseeded, sliced
  • 125 g cherry tomatoes, halved
  • 50 g raisins
  • 4 spring onions, chopped spring onions
  • a handful fresh mint leaves about a handful
  • 1 lime juice of 1 lime
  • to taste olive oil, for drizzling
  • to taste salt and pepper

Method
 

  1. Rinse quinoa and cook according to package instructions.
  2. Spread cooked quinoa on a plate to cool.
  3. Toast almonds in a dry pan until golden, then add to a salad bowl.
  4. Peel cucumber in strips, deseed, and slice; add to bowl.
  5. Add cherry tomatoes, raisins, spring onions, and mint to the bowl.
  6. Add cooled quinoa, season with salt and pepper.
  7. Drizzle lime juice and olive oil, then toss gently.
  8. Garnish with remaining mint and serve.
