Method
- Preheat oven to 190°C (375°F).
- Toss rhubarb with sugar, flour, vanilla, and cardamom. Let sit 10–15 minutes. Pour into a baking dish.
- Pulse flour, salt, and brown sugar. Add butter and pulse until crumbs form, or mix with a pastry cutter.
- Sprinkle topping over rhubarb without pressing down.
- Bake for 35–45 minutes until golden and bubbling.
- Cool for 30 minutes. Serve warm with ice cream or cream.
