Ingredients
  

Vegetables
  • 1.6 kg ripe tomatoes (plum or cherry)
  • 3 tbsp olive oil
  • Salt and cracked black pepper Salt and cracked black pepper to taste
  • 1 large onion, diced
  • 5 cloves garlic cloves, minced
  • 0.75 tsp smoked paprika
  • 0.25 tsp crushed red pepper flakes
  • 600 ml vegetable broth
  • 15 g fresh basil
  • Optional Parmesan, cream, croutons for serving

Method
 

  1. Preheat oven to 450°F (230°C).
  2. Halve or quarter tomatoes, place cut-side up on tray. Drizzle with 2 tbsp oil, salt, pepper. Roast 30–40 min.
  3. Heat 1 tbsp oil in pot. Sauté onion 5 min. Add garlic, paprika, red pepper flakes. Cook 2 min.
  4. Add roasted tomatoes (with juices), broth, and basil. Blend until smooth. Adjust seasoning.
  5. Serve hot with desired toppings.

Notes
