Ingredients
  

  • 500 g salmon fillets fresh, skin removed
  • 50 g panko breadcrumbs or crushed crackers
  • 2 tbsp Dijon mustard
  • 1 lemon zest zest of 1 lemon
  • 2 tbsp fresh dill chopped
  • 1 tsp garlic powder
  • 1 tbsp olive oil
  • salt & pepper to taste

Method
 

  1. Finely chop salmon and mix with breadcrumbs, mustard, lemon zest, dill, garlic powder, salt, and pepper.
  2. Form 4 patties, press shallow indent in centers, and chill 10 min.
  3. Heat pan over medium‑high, add oil, and sear patties for 3‑4 min until crust forms.
  4. Flip, add butter, baste for 2 min, then rest 2 min before serving.

Notes

Let patties rest chilled—it stops them falling apart and creates a crisp crust.
