Method
- Preheat oven to 220°C (425°F).
- Roast potatoes with oil and seasoning for 20–25 minutes.
- Slightly smash each potato with a fork or glass bottom.
- Add salmon, beans, and tomatoes. Lightly spray and roast for 12–15 minutes.
- Blend greens, crème fraîche, lemon zest, and juice into a sauce. Season to taste.
- Plate salmon and vegetables, drizzle with green sauce. Serve hot or cold.
