Ingredients
  

Main ingredients
  • 0.5 kg baby new potatoes
  • 2 large salmon fillets (150–180g each)
  • 200 g cherry tomatoes, halved
  • 200 g fine green beans
  • 40 g watercress
  • 40 g baby spinach
  • 4 tbsp fat-free crème fraîche
  • 1 each lemon (zest and juice)
  • to taste Salt and pepper

Method
 

  1. Preheat oven to 220°C (425°F).
  2. Roast potatoes with oil and seasoning for 20–25 minutes.
  3. Slightly smash each potato with a fork or glass bottom.
  4. Add salmon, beans, and tomatoes. Lightly spray and roast for 12–15 minutes.
  5. Blend greens, crème fraîche, lemon zest, and juice into a sauce. Season to taste.
  6. Plate salmon and vegetables, drizzle with green sauce. Serve hot or cold.
