Ingredients
  

Main
  • 800 g skinless, boneless salmon fillet
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 1 teaspoon dried dill
  • 1 small yellow onion, chopped
  • 3 cloves garlic, minced
  • 300 g frozen spinach
  • 2 teaspoons salt
  • 1 bunch fresh dill, finely chopped
  • 240 g cream cheese, softened
  • 1 lemon zest
  • 1 teaspoon lemon juice
  • 370 g puff pastry
  • 1 egg yolk whisked

Method
 

  1. Preheat oven to 200°C (400°F).
  2. Season salmon with salt, pepper, dill.
  3. Sauté onion and garlic. Add spinach, cook dry. Let cool.
  4. Mix spinach with cream cheese, lemon zest, lemon juice, and dill.
  5. Roll out pastry. Layer filling and salmon. Fold and seal.
  6. Score top and brush with egg yolk.
  7. Bake for 25–30 minutes until golden.
  8. Rest for 5 minutes. Slice and serve.
